Ceviche Sauce

Ingredients
  

  • 4 tablespoons lemon juice
  • 2 teaspoons yuzu juice *
  • 1/2 teaspoon sea salt
  • 1 teaspoon soy sauce
  • 1/2 teaspooon finely grated garlic
  • 1/2 teaspoon grated ginger
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon aji Amarillo paste **

Instructions
 

  • Combine all the ingredients in a small bowl and whisk until well combined.

Notes

* Fragrant Asian citrus that looks like a small, puckery grapefruit, with notes of grapefruit and tangerine. If unavailable, substitute a teaspoon each grapefruit juice and tangerine or orange juice.
** A spicy yellow pepper paste, available in many ethnic markets and gourmet stores.
