Vegan Tempeh Bacon

No it is not exactly bacon, but it’s smoky, sticky, high in protein and animal-friendly. Enjoy and still look Esther the Wonder Pig in the eye.

Ingredients
  

  • 1 tablespoon white miso
  • 1 tablespoon maple syrup
  • 1 tablespoon coconut oil
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon smoked paprika
  • 4 ounces tempeh 1/2 package, sliced thin

Instructions
 

  • Preheat oven to 350 degrees.
  • In a small bowl, combine all ingredients except the tempeh. Stir briefly until it forms a smooth but thickish paste.
  • Lay thinly sliced tempeh strips on a lightly oiled baking sheet. Using a basting brush, paint the miso-maple paste on the tempeh.
  • Bake for 15 minutes. Flip tempeh strips over, brush with the remainder of the miso-maple paste and bake for another 15 minutes, or until vegan bacon strips are just starting to blacken at the edges and the whole kitchen smells smoky, sexy and fabulous.
  • Remove from the oven, add to salads, make vegan BLTS, chop and add to tofu scrambles, enjoy any way you like.
