1cupfresh mangoabout 1 mango, peeled and sliced. Frozen mango also works
1cupunsweetened plain vegan yogurtI love Kite Hill and Culina.
½cupsoda water
handful of ice cubes
pinchcardamon
½teaspoonrose water or orange blossom wateroptional
1tablespoonof evaporated cane sugar if you need it
mint leaves and/or crushed pistachios for garnish
Instructions
In a blender or food processor, blitz together the mango, vegan yogurt, soda water and ice cubes until smooth and frothy.
Add cardamon and optional rose water or orange blossom water and give it one more whirl. Taste. It should be sweet and creamy and spirit-lifting. If you want sweeter, add the optional tablespoon of sugar and give it a final blast in the blender.
Fill two tall glasses with ice, pour the lassi over all and garnish if desired.
