Mango Lassi

Ingredients
  

  • 1 cup fresh mango about 1 mango, peeled and sliced. Frozen mango also works
  • 1 cup unsweetened plain vegan yogurt I love Kite Hill and Culina.
  • ½ cup soda water
  • handful of ice cubes
  • pinch cardamon
  • ½ teaspoon rose water or orange blossom water optional
  • 1 tablespoon of evaporated cane sugar if you need it
  • mint leaves and/or crushed pistachios for garnish

Instructions
 

  • In a blender or food processor, blitz together the mango, vegan yogurt, soda water and ice cubes until smooth and frothy.
  • Add cardamon and optional rose water or orange blossom water and give it one more whirl. Taste. It should be sweet and creamy and spirit-lifting. If you want sweeter, add the optional tablespoon of sugar and give it a final blast in the blender.
  • Fill two tall glasses with ice, pour the lassi over all and garnish if desired.
