Irish Soda Bread
Soda bread, the pride of Ireland, is an easy quick bread. Baking soda, not yeast, provides the lift, raisins, cinnamon, and just a little sugar makes it mildly sweet, but the real secret to success is using a combination of whole grains for a cozy, rustic flavor and texture.
Ingredients
- 3/4 cup whole wheat flour
- 1/2 cup unbleached all-purpose flour
- 1/2 cup oatmeal*
- 1/4 cup wheat germ
- 1 teaspoon baking soda
- 4 tablespoons vegan butter 1/2 stick
- 3 tablespoons cane sugar
- 2 teaspoons cinnamon
- 1-1/4 cup oat milk
- 1/2 cup raisins
Instructions
- Preheat oven to 375° F.
- Lightly butter or oil an 9X5” loaf pan.
- In a large bowl, combine whole wheat and unbleached all-purpose flours, oatmeal, wheat germ, and baking soda. Using a large mixing spoon or clean hands, work in vegan butter until mixture forms coarse crumbs.
- Stir in cinnamon and sugar and oat milk. When you have a nice, thick batter, add raisins and give a quick stir to combine.
- Pour batter into the prepared loaf pan.
- Bake for 30 minutes. or until top is brown and a tester comes out clean. Allow to cool before slicing, or bread may be crumbly.
Notes
*Use oatmeal flakes also called rolled oats, not instant oats, not pinhead or steel-cut oats.
