Some people have a gift for tapping in to the positive energy of the universe. They sip serendipity, they go with the flow, they are the flow. I am not one of them. Usually. However, even I lucked out. Yesterday, St. Patrick’s Day, I find myself on Vegan Street . This has everything to do with the mighty Vegan Street team of John Beske and Marla Rose, who build vegan community in their hometown of Chicago and virtually through their activism. They are the best kind of cheerleaders.
I may not always be lucky, but I’m always grateful — because of people like them, because of people like you (awwwww) because of pelicans and puppies and farmers markets and organic growers and abundant oceans and amber waves of grain (Whole Grains Sampling Day is coming, people — mark it down). Speaking of whole grains, Marla was kind enough to include my recipe for vegan Irish soda bread, not bad if I say so myself.
Erin go bragh, everyone ( that’s Gaelic — or close to it — for Ireland forever). That and ba po (which means white cow) is the extent of my Irish. Oh, and slainte. That’s a long way of saying happy St. Patrick’s Day, everyone, and be lucky.
